Ingredients
250ml buttermilk
2 eggs
30g melted butter
170g Ballybrado Organic Whole Einkorn Flour
Pinch salt
50g sugar
10g baking powder

Einkorn-Buttermilk Pancakes
1. Beat eggs and buttermilk until thick and creamy.
2. Add melted butter and mix.
3. Combine flour, salt, sugar and baking powder in a bowl and mix.
4. Add all dry ingredients to the egg/buttermilk mixture and mix just until you have a smooth
dough. Don’t over-mix.
5. If dough is too thick, add some more buttermilk. If dough is too thin, add some more flour.
6. Leave to rest for about 5 mins.
7. Pour small portions of dough into a heated frying pan using a ladle. Bake on both sides until
golden-brown.
8. Serve plain or with topping of choice, e.g., maple syrup, butter, chocolate spread, fresh fruit, raisins, lemon juice and sugar…
