Ingredients

250g butter or margarine

225g sugar

1 tsp. vanilla essence

4 eggs

250g Ballybrado White Spelt Flour (or wholemeal, for a nuttier taste)

60g ground hazelnuts

1 tsp. baking powder

100g chocolate chips

Easy-Peasy Get-out-of-Jail Cake

  1. Mix butter, sugar, vanilla essence with the hand mixer until fluffy
  2. Add one egg at a time and continue beating
  3. Mix flour, ground hazelnuts and baking powder. Add to butter-sugar mix and combine well
  4. Add chocolate chips and fold under with spoon
  5. Fill into a greased cake tin and bake in a preheated oven at 160° C fan for approx. 50 – 60 minutes
  6. Insert a skewer to see if the cake is done – if the skewer comes out clean the cake is done
  7. Leave to cool in the tin for approx. 10 mins, then turn out onto a cooling rack to cool completely
  8. Dust with icing sugar or cover with melted chocolate, as you wish
