Ingredients
3 ripe bananas
230g sugar
250g Ballybrado Organic White Spelt Flour
2 eggs
30 ml neutral oil
20g baking powder
65ml milk
Pinch of ground vanilla/vanilla essence
Pinch of cinnamon
100g roasted hazelnuts (chopped or whole, as you prefer)

Ballybrado’s best Banana Bread with White Spelt Flour
- Preheat oven to 160ºC fan.
- Mash bananas and mix with sugar in a bowl.
- Add all other ingredients except hazelnuts and mix thoroughly.
- Fold in hazelnuts
- Place dough in greased 2lb (26cm) loaf tin.
- Bake in bottom of oven for 40-45 mins. or until skewer inserted comes out clean.
- Leave to cool on a wire rack.
